this is a dish that has become very easy to make for me. The only thing I have to do is chop the fresh herbs and add fresh tomatoes to a pot of simmering water. I throw in some red and green bell pepper, some fresh basil, and a handful of fresh mozzarella. I add in a little stock from the last time I cooked the pasta, and voila! The whole thing cooks in about 30-45 minutes.
